Interpretive Summary: The USDA National Fluoride Database of Selected Beverages and Foods is a comprehensive and valid database of the fluoride concentration in 375 foods and beverages, across 23 food groups, consumed in the United States. The table contains fluoride values for beverages, water, and foods that are major fluoride contributors. The Nutrient Data Laboratory (NDL) at the Agriculture Research Service, US Department of Agriculture (USDA) coordinated the development of this National Fluoride Database as a critical element of the comprehensive multi-center National Fluoride Database and Intake Study (NFDIAS) effort. The National Fluoride Database is critical to the NFDIAS research project as it will be incorporated into a computer-based fluoride assessment tool being developed by the University of Minnesota, Nutrition Coordinating Center (NCC), as a module of the Nutrition Data System for Research (NDS-R) software. The National Fluoride Database will be of value to the US dental health research community and to investigators monitoring fluoride intake that may result in dental and skeletal fluorosis.
Technical Abstract: The USDA National Fluoride Database of Selected Beverages and Foods has been developed through the National Fluoride Database and Intake Assessment Study (NFDIAS) a multi-center effort between USDA/ARS, the University of Minnesota (NCC), the University of Iowa and Virginia Polytechnic Institute & State University (VPI&SU). USDA's Nutrient Data Laboratory (NDL) has developed the National Fluoride Database to be released to the general scientific community and adapted to support fluoride assessment methodology under development at NCC. The database contains values for 375 foods and beverages, across 23 food groups, consumed in the United States that are major fluoride contributors. High priority beverages, contributing 80% of dietary fluoride consumed in the United States, including municipal (tap)/drinking and bottled waters, teas, carbonated beverages, beers, and ready-to drink juices and drinks were analyzed by the U of Iowa, College of Dentistry. The NFDIAS analytical data for key fluoride contributors, unpublished data generated by the U of Iowa, and data gathered from the published literature were entered into, evaluated and compiled in the USDA National Nutrient Databank System. Fluoride levels for most retail carbonated and juice-containing beverages are less than 100 mcg/100 g. Results indicate that, for beverages and foods, the level of fluoride is affected by the level of fluoride in the water used to prepare the products either by the manufacturer or at home. Data include the national average fluoride levels and variability estimates for drinking water, and selected foods and beverages. Assessment of fluoride intake is critical to monitoring dental health as well as to preventing excessive fluoride intake resulting in dental and skeletal fluorosis. The database will be a key factor in future research concerning the relationship of fluoride intake to health status.
