Interpretive Summary:

Technical Abstract: Hazard analysis and critical control programs (HACCP) will eventually be required for commercial shell egg processing plants. Sanitation is an essential prerequisite program for HACCP and is based upon current Good Manufacturing Practices (cGMPs) as listed in the Code of Federal Regulations. Good sanitation prevents potential chemical, physical, or biological hazards from becoming real problems. Executed correctly, low risk potential hazards will be prevented from becoming serious enough to affect consumer safety. This paper will explain the difference between SSOPs and GMPs as well as give some specific guidelines and examples for writing both types of documents.
