Technical Abstract: US rice imports consist of approximately 80 percent aromatic types. Although they are a much sought after type of rice, little is known about the component, 2-acetyl-1-pyrroline (2-AP), which impacts their popcorn like aroma. The efforts to breed, produce, store and process aromatic rice could be refined from understanding the chemistry of 2-AP. Several aromatic crice samples were separated into fractions ranging from brown rice to over milled rice. The 2-AP was found to exist primarily in an evenly distributed fashion throughout the endosperm. Exposure to several solvents indicated that 2-AP is associated with the bound lipid fraction of rice. 2-AP is primarily located in the endosperm portion of the rice kernel and may be associated with the bound lipid fraction.
