Objective:
We are working to pioneer an alternative genetic breeding approach to increase dough extensibility in new wheat cultivars for the US Great Plains. We will select wheat cultivars through traditional breeding and molecular based site directed mutagenesis (CASPER-9) to optimize the composition of high molecular and low molecular glutenins for a combination of high dough strength and extensibility.

Approach:
1. Cooperator will generate wheat varieties with normal and high extensibility. 2. Evaluate protein quality analyses (glutenin, gliadin contents and molecular size distributions etc.) and flour quality of collected wheat samples. 3. Evaluate flours for tortilla and other flatbread potential.
