This project will empirically measure the energy value of walnuts and evaluate the impact of walnut consumption on lipid parameters associated with cardiovascular disease risk factors in humans as part of a mixed diet.
ARS will conduct a randomized clinical trial to investigate the effect of walnuts, a high-fat, high-fiber food on nutrient absorption and evaluate the effect of walnuts on pathways associated with cancer and/or cardiovascular disease.
