Today, all pickle slices are practically standard on hamburgers in restaurants everywhere, representing 25 percent of the pickle market. The boom in everything from dill slices to sweet relishes on grocery store shelves has its roots in the efforts of one ARS laboratory in Raleigh, North Carolina.
