Interpretive Summary: There are many styles and configurations for egg carriage systems. It is important to familiarize yourself with each egg processing system you encounter to ensure the carriage system is effectively evaluated before processing begins each day. Keep in mind, in any system, egg contact areas and associated components are critical.

Technical Abstract: This training module is part of a suite focused on shell egg processing facility sanitation and pre-operational expectations. The current module focuses on the egg carriage system within an egg processing facility. Experts have collaborated to develop and present the material for a wide audience with the intent of meeting a training need for both regulatory and egg industry personnel.
