Objective:
Develop pilot scale methods to dehull dry beans.

Approach:
We will evaluate dehulling efficiency of dry beans using two methods: 1) dry cracking and seed coat aspiration, and 2) high moisture tempered bean seed coat removal. The dry dehulling will be achieved by first air drying seeds to 10% moisture and passing them through a mill without a sieve to crack the seeds into a few large pieces. This method will be optimized for small (100 g), medium (100-1000 g) and large (1 kg to 5 kg) seed lots. Dehulling efficiency will also be tested on moisture tempered beans with a lab- scale soybean dehuller used in tofu production available through the cooperator.
