Interpretive Summary: Technical Abstract: Vitamin A is essential during embryonic development and, in the adult, it is necessary for vision, immunity, metabolism, cellular proliferation, differentiation, and apoptosis. Recently, additional functions of vitamin A such as regulation of energy balance, insulin signaling and nervous system activities have been discovered. Plant-derived compounds, known as provitamin A carotenoids, can be converted to vitamin A in animals. This book chapter summarize the chemistry, biochemistry, molecular and cell biology, as well as health benefits of vitamin A in recent years, and provides broad and up-dated information on vitamin A research. |
