Interpretive Summary: Dy10-DLC is a novel wheat line that is deficient in Dy10 protein, one of the high-molecular weight glutenin storage proteins in the seed. Dy10-DLC, together with other glutenin deficient lines, will be used to develop low-gluten wheat that is safer for consumers with gluten-related sensitivities. Furthermore, the shorter mixing time exhibited by D10-DLC, could provide a genetic source to manipulate to shorten dough development. A shorter dough development time could potentially save significant energy cost in commercial bread production.

Technical Abstract: Dy10-DLC wheat is a line deficient in high-molecular glutenin subunit Dy10 protein derived from the elite bread wheat variety T. aestivum Summit.
