Interpretive Summary:

Technical Abstract: Antioxidant properties of phenolic compounds have been implicated in the slowing or prevention of a variety of human diseases such as hypertention, inflammation, and cancer. Investigation of the antioxidant behavior of plant phenolics remains an important area of investigation in human food and health issues. In addition to the reported human benefits of o-diphenols as antioxidants, recent reports have shown that the presence of compounds containing the o-diphenol functionality during ensilage of forages (either naturally occurring or in plants tranfected with polyphenoloxidase [PPO]) results in enhanced protein preservation of the stored forage. A recently isolated o-diphenol derivative, 1-O-methylchlorogenic acid, showed superior antioxidant properties to other o-diphenols of its class. Progress toward the synthesis of 1-O-methylchlorogenic acid is described.
