Technical Abstract: Guar [Cyamopsis tetragonoloba (L.) Taub.] seed is used as an emulsifier, thickener and stabilizer in a wide range of foods. Guar seeds are potentially high sources of additional phytochemicals such as flavonoids. This study examined the content of flavonoids, including daidzein, genistein, quercetin, and kaempferol in the seeds of 33 guar accessions. The data were subjected to principal component analysis to determine the flavonoid traits most effective in discriminating between accessions. It was found that flavonoids in the seed were significantly variable among guar accessions. Differences in daidzein, genistein, quercetin, and kaempferol among guar accessions were identified. The accessions, PI 164299, PI 180432, PI 340253, and PI 426631 were extremely high in total flavonoid content and could be used as nutraceutical supplements or used as parents to make crosses in a breeding program to enhance such traits. Principal component analysis 1 showed that much of the discrimination among guar accessions occurred between daidzein, genistein, and kaempferol, while principal component analysis 2 showed high discrimination among accessions of quercetin only.
