Interpretive Summary: Guar seeds contain many useful chemicals for protecting human health. More than 200 samples of guar are stored at the Plant Genetic Resources Conservation Unit, Griffin, GA. The amount of the isoflavonoids daidzein, genistein and the flavonols quercetin and kaempferol in guar seed samples are unknown. These chemicals have shown to be useful in cancer inhibition and several other health benefits for humans. Limited information for the amount of these chenicals in guar seeds is available. Therefore, techniques are reported to determine the amount of both isoflavonoids and flavonols in guar seeds. The average for daidzein was 1.133 mg and 0.800 mg for genistein while the average for quercetin was 0.572 mg and 14.457 mg of kaempferol per 100 g of seeds from all guar samples tested. The techniques proved that diadzein, genistein, quercetin, and kaempferol exist in guar seed at various ranges.

Technical Abstract: Guar (Cyamoposis tetragonoloba (L.) Taub. contains isovlavonoids and flavonols which can be used in the human health industries as either medicines or nutraceuticals. Both daidzein and genistein have antioxidant properties, induce detoxification enzymes, and inhibit breast and prostate cancer cells. Kaempferol and quercetin inhibit lung and colon cancer cells and protect against ultraviolet radiation. The objectives of this study was to quantify daidzein, genistein, kaempferol, and quercetin from 12 guar genotypes. Daidzein, genistein, kaempferol, and quercetin from each guar accession were extracted, characterized, and quantified. Guar contained an average of 1.133 mg of daidzein, 0.800 mg of genistein, 0.572 mg of quercetin, and 14.457 mg of kaempferol per 100 g. of seeds. Therefore, guar genotypes with a range in the amounts of daidzein, genistein, kaempferol, and quercetin were identified.
