Interpretive Summary: Technical Abstract: This short review presents a summary of current knowledge regarding the epidemiology of Salmonella in livestock, cattle, swine, and poultry. In summary, salmonella in livestock is a chronic problem. There are many sources of infection, many reservoirs, and many infection motifs. It will take constant effort throughout the food production and processing and consumption system to continue the reductions in carcass contamination and human illness rates currently being achieved. |
