Technical Abstract: My talk will present an overview of grape metabolites from anabolism and catabolism during berry development, and their significance to different wine styles. For example, grape secondary metabolites, such as phenolics, have long been valuable for the organoleptic properties they impart to fruit and wine, but more recently there has been great interest in their possible human health benefits. These compounds are crucial to the evolution of appearance, flavor, and texture that directly affect consumer-purchasing decisions. Research highlights of grape primary and secondary metabolite investigations will be covered; with data from previous and current vineyard management projects manipulating sunlight, temperature, vine nutrients, or early leaf removal.
