Interpretive Summary: Packinghouse managers deal with issues of sanitation and control of plant pathogens and other microbes, the quality of water that is discharged from packinghouses after use in processing, and the removal of ethylene gas that accelerates fruit aging. Ozone could be an element in the management of these problems. In this popular review article, submitted to this annual semi-technical publication for apple and pear growers and packers, the author reviews and discusses actual and potential applications of ozone in fresh fruit packing and storage operations.
