Objective:
Objective 1: Compare the results of fry color assessments performed using human index scoring and a RGB camera-based image processing. Objective 2: Crowd-source data collection of potato defects and encourage cooperation and joint development of hardware and software resources through cross-discipline collaboration.

Approach:
Objective 1: Fry color assessment of russet and/or chip stock material will be performed according to the USDA color index scoring method by state university cooperator. These scores will be compared to the colorimetric values automatically extracted from RGB images of French fries collected using the inspection platform. Objective 2: Cooperators at Colorado State University will be provided with funds incorporate imaging solutions at their research location(s). A major goal is to facilitate image dataset collection in new contexts (Colorado growth environment) that can be used to by the cooperator(s) to construct AI models which quantify potato tuber defects caused by environment or pathogens.
