Research Project: Application of Image Analysis Techniques to Quantify Potato Processing Quality and Disease Symptomatology

Location: Temperate Tree Fruit and Vegetable Research

Project Number: 2092-21220-003-016-S
Project Type: Non-Assistance Cooperative Agreement

Start Date: May 30, 2022
End Date: May 29, 2024

Objective:
The objective is to construct a high-throughput potato inspection platform that can be used to collect red green blue-depth (RGB-D) and multi-spectral image data from potato tubers, potato tuber slices, French fries, and potato chips. The goal is to use this platform to assess product recovery from tubers, fry quality, and nematode damage in russet potato tubers.

Approach:
Design and construct a conveyor system to transport research subjects under red green blue-depth (RGB-D) and multi-spectral sensors. We will evaluate the utility of this instrument to measure the 3-dimenisional size and shape of intact potato tubers by comparing measurements taken with digital calipers to those collected using the inspection platform. Fry and chip quality will be assessed by comparing the colorimetric values extracted from images to values estimated using the USDA color scoring index method.
