Interpretive Summary: This chapter identifies the most prominent parasites in North America that are acquired through contaminated food and water including protozoa, roundworms, tapeworms, and flukes. For each parasite there is information on the prevalence, life cycles, clinical manifestations, sources of infection, methods of detection, and methods for prevention of infection and treatment of these parasites. To aid with identification/detection/diagnosis each parasite is assigned a website where photographs and/or drawings are found. Sections also describe inspection of fish and meat, and methods for concentrating parasites from water.

Technical Abstract: This chapter identifies the most prominent parasites in North America that are acquired through contaminated food and water including protozoa (Acanthamoeba, Naegleria, Entamoeba, Giardia, Cryptosporidium, Cystoisospora, Cyclospora, Toxoplasma, and Balantidium), nematodes (Trichinella, Angiostrongylus, Gnathostoma, Anisakis, Pseudoterranova, and Eustrongylides), cestodes (Diphyllobothrium, and Taenia), and trematodes (Fasciola, Metorchis, Opisthorchis, Clonorchis, Paragonimus, Nanophyetus, and Alaria). Sections also describe inspection of fish and meat, and methods for concentrating parasites from water. For each parasite there is information on the prevalence, life cycles, clinical manifestations, sources of infection, methods of detection, and methods for prevention of infection and treatment of these parasites.
