1a.Objectives (from AD-416):
Conduct descriptive sensory analysis to determine the sensory space (range of flavor) and evaluate flavor related quality characteristics of world market peanuts.
1b.Approach (from AD-416):
Twenty samples (approximately 25 lbs) from each origin country (China, Argentina, Nicaragua, Brazil, and the U.S.) will be selected by manufacturers at appropriate import locations and shipped to Raleigh, NC. Samples will be roasted, blanched and paste preparation will be accomplished following published guidelines. Descriptive sensory analysis (DSA) will be conducted by the USDA, ARS sensory panel. Data will be analyzed to determine differences among samples from the origins. Oil chemistry components affecting shelf life (flavor) will be determine.
This project is related to in-house objective 1 addressing how to determine the effect of composition, maturity, moisture, handling, processing, and relevant interactions on flavor, shelf-life and texture characteristics in peanuts, peanut products, and related commodities.
Samples for compositional and flavor analysis from the US, Argentina, and China have been evaluated approximately every 5 years beginning in 2000. Samples (15 from each origin)in 2005 were evaluated by descriptive sensory panels and consumers in the US, UK, The Netherlands, and Germany. Flavor and consumer flavor preference and compositional quality of US peanuts were consistently the highest. Samples (15 from each origin) from 2011 from Argentina, China, Brazil, and the US demonstrated continued higher quality in US peanuts and some improvement in quality of peanuts from Argentina.
