Interpretive Summary:

Technical Abstract: Pullulan (PUL), a food grade polysaccharide, was fabricated into fibrous mats from fibers of submicron size by electrospinning. The effects of inorganic salts and polyanions present in the electrospinning solution on the properties of the resultant fibers was investigated. The inclusion of exogenous sodium cations associated to the oxygen in the C6 position of PUL enhanced PUL chain entanglement by interrupting the intra- and inter- macromolecular hydrogen bonding, thus facilitating fiber formation; while, excessive salts impeded fiber formation. The inclusion of pectin (PEC) polyanions formed composite fibers of PUL and PEC from which cross-linked PEC fibrous mats were obtained and used as bioactive carriers for encapsulation of Lactobacillus rhamnosus GG, which has shown human health benefits.
