Technical Abstract: The bacterial genus Pseudomonas comprises a very large and important group of bacteria. They can be found abundantly as free-living organisms in soils, fresh water and marine environments, and in many other natural habitats. They can also be found in association with plants and animals as normal flora or causal agents of diseases or food spoilage. In this chapter, Pseudomonas and related bacteria (Shewanella and Xanthomonas) which cause spoilage of animal- and plant-derived food products are described. The topics reviewed include bacterial detection and enumeration, extrinsic and intrinsic factors affecting survival and growth of the bacteria on foods, the bacterial mechanisms responsible for spoilage and the control of bacterial mediated spoilage. In addition, the potential of specific Pseudomonas strains as biological control agents of plant postharvest diseases and of human pathogens will be discussed.
