Interpretive Summary: Soft red and soft white winter wheat is used for a wide array of products in the domestic milling industry. This report provides soft wheat breeders with information from industry on the acceptability of flours made from newly developed cultivars. The primary purposes of the project are to educate buyers, direct marketing, and provide feedback to breeders.

Technical Abstract: The 2011 U.S. Wheat Associates Overseas Varietal Analysis project evaluated ten soft red winter wheat varieties: Malabar and AGI 303 from Ohio, Terral TV 8861 from Louisiana, SY 9978 and Coker 9804 from North Carolina, Merl and Shirley from Virginia, AGS 2060 from Arkansas, and USG 3201 and USG 3251 from Tennessee. Among the seven cooperators who evaluated cookies, Terral TV 8861 ranked best overall followed by USG 3251, SY 9978, and USG 3201. Coker 9804 was least preferred. Terral TV 8861, Malabar, SY 9978, and USG 3251 were ranked as best for cookies and Terral TV 8861, Malabar, AGI 303, and USG 3251 as best for top grain analysis. The ten varieties were evaluated for use in chiffon and sponge cake recipes. Merl and Shirley ranked best for chiffon cakes and AGS 2060 was least prefered. USG 3251 and Terral TV 8861 were ranked best for sponge cakes followed by AGS 2060 and USG 3201 with Malabar being least preferred. AGS 2060, AGI 303, and USG 3201 were most favored for steam bread and Shirley was least prefered.
