Technical Abstract: Proton nuclear magnetic resonance (1H-NMR) spectroscopy is a useful tool for the analysis of fatty compounds and their mixtures. This analytical method can be used for various purposes including determining the fatty acid profile, quantitating mixtures of fatty compounds such as those of different vegetable oils or mixtures of vegetable oils with other fatty derivatives, monitoring of oxidation of fatty compounds, reaction monitoring, solid fat content, as well as determining non-fatty materials. Experimental and practical aspects of NMR compared to other analytical methods are also briefly discussed.
