Technical Abstract: Oatrim, Z-Trim and Nu-Trim are oat-based ingredients used for nutrifying and texturizing foods. All three ingredients add fiber to the diet. Oatrim has a soluble beta-glucan component which contributes to the formation of a gel on heating and cooling an aqueous slurry. Either the Oatrim powder or its hydrated gel can be used for replacing fat in low-fat and fat-free foods. Z-Trim (Z for its zero caloric value) is an insoluble fiber gel. It adds texture and lowers calories in foods. Z-Trim oat fiber is prepared from oat hulls to give an easy- flowing powder. The powder can be rehydrated to regenerate a non-gummy gel. Nu-Trim is a new hydrocolloid composition containing soluble beta-glucan. It is prepared from milled oat flours and bran in high yields. It can contribute large amounts of beta-glucan as a nutrifying agent as well as serve as a softening agent in low fat and fat free foods. Nu-Trim, when used with other oat products, yields food products with greater than 0.75 grams of soluble beta-glucan per portion in cookies, cakes, brownies, muffins, and other foods. Increased health benefits, as well as variable functionalities, can be obtained by combining Oatrim, Z-Trim and Nu-Trim.
