Interpretive Summary: American diets are recognized to be high in fat and low in dietary fiber. Z-Trim is a new generation fat replacer that can be used to decrease fat and increase fiber in foods. It is called Z-Trim because it has zero calorie value. Z-Trim is prepared from a variety of low-cost agricultural fibrous products, such as hulls and brans. Z-Trim absorbs large amounts of water to give a gelatin-like product for using in foods without giving calories and increasing fiber content. By using Z-Trim, foods are designed to give desirable taste and mouthfeel properties similar to the usual full-fat foods. The gelatin-like material is suitable for hamburger, deli meats, cheeses, and some baked foods. Large calorie reductions in the diet are possible by using Z-Trim. The farmer, manufacturer, and consumer all benefit by utilization of farm products to produce more nutritious foods for the consumer.

Technical Abstract: Z-Trim is a new generation fat replacer and texturizing ingredient which offers a healthful opportunity for foods with pleasing texture and lower calorie value. Low-cost agricultural byproducts such as hulls of oats, corn, rice, soybean, and peas, or brans from corn and wheat are treated in a multistage process to completely disintegrate their morphological cellular structures. The generated cellular fragments are purified, dried, and milled to an easy-flowing powder. When rehydrated, Z-Trim particles absorb water producing large deformable structures giving inordinately high viscosities with smooth mouthfeel. Z-Trim uses, in the range of one gram or less, can replace 90 fat calories in some foods.
