Interpretive Summary:

Technical Abstract: The aim of this review is to provide the general reader with an overview of Fusarium moniliforme and fumonisin toxins in maize. We will first describe the pathogenesis of F. moniliforme and related fungi on maize. We will then present a brief historical perspective on the discovery of fumonisins and their significance in human and animal diseases. We will discuss the natural occurrence of fumonisins in maize and maize-based foods and feeds and the present status of fumonisin regulatory guidelines. Finally, we will present current and potential methods for reducing fumonisin contamination in foods and feeds.
