Interpretive Summary:

Technical Abstract: This book chapter provides comprehensive descriptions of the 10 species assigned to the yeast genus Saccharomycopsis. Species of this genus are distributed worldwide. One of the species, S. fibuligera, is a source of the enzyme amylase. Two of the species produce hydroxy fatty acids that are of potential industrial interest. In addition to the descriptions, this chapter describes laboratory methods for species identification.
