Interpretive Summary: Research in the Food Science & Market Quality & Handling Research Unit has demonstrated the value-added uses for the estimated 40 million to 70 million pounds of peanut skins that are stripped annually from the nut in the process of making peanut butter, snacks, oil, or candy. This research has demonstrated that peanuts skins are nutrient-rich and could be alternatively utilized as a functional poultry feed additive to enhance animal health and production.
