Interpretive Summary:

Technical Abstract: There are substantial advances in the present food industry, from technology to novel products through packaging materials. Recent global events slowed down the world and allowed the consumer and industry to re-think some processes and some strategies in terms of innovation. Technologies, food products, and packaging materials are taken together as a system that must be sustainable in the long term, ensure the food safety of the product, and be available to everyone. The present in the food industry and research is showing the pathway that needs to be followed for the future to be able to sustain the production chain together with innovation and provide not only healthy, safe, and high-quality food but also to reuse food waste and curb greenhouse gas emissions and global food insecurity.
