Technical Abstract: This chapter reviews the biochemistry, physiology of the diverse array of vitamins, trace minerals, and other micronutrients, that are necessary for sustaining human health, including our discussions about present controversies that pertain to how nutritional science arrives at the optimal intake of each nutrient. Also discussed is the controversy over the use of vitamin and mineral supplements, including insights as to which segments of the population might benefit from such supplementation.
