Technical Abstract: There is currently an intense interest in starch-based materials because of the low cost of starch, the replacement of dwindling petroleum-based resources with annually-renewable feedstocks, the biodegradability of starch-based products, and the creation of new markets for farm commodities. Non-traditional processing methods have been developed to modify starch properties for a wide range of end-use applications. The most important of these methods include annealing and heat-moisture treatment, high-pressure treatment, microwave processing, treatment with ultrasound, processing with supercritical fluids, extrusion processing, and steam jet cooking. The current literature in these areas has been reviewed.
