Interpretive Summary: Technical Abstract: Salmonella was isolated from scald tank water, foam, and carcass rinses during scalding and picking from a poultry processing plant over nine consecutive weeks. Fifteen S. enterica serotypes were isolated, with Kentucky, Typhimurium, Schwarzengrund, and Enteritidis accounting for 52%, 14%, 11%, and 8% respectively (n = 429). S. Enteritidis phage types 8, 13, and 24 were identified. Salmonella was isolated from 85% of carcass rinses. Multiple serotypes were isolated from carcasses against a background of S. Kentucky. Salmonella serotypes were pan-sensitive with the exception of Kentucky and Typhimurium. The variety and number of serotypes differed between samplings, reflecting farm differences. |
