Interpretive Summary:

Technical Abstract: Distillers dried grains (DDG) is a cereal byproduct of the rapidly growing fuel ethanol industry in United States. Currently, DDG is used for livestock feed since it is high in protein. Because of the shear magnitude of agricultural crop biomass converted to fuel ethanol, large quantities of DDG are available and will require utilization into a wide range of industries to improve overall economics of the biofuels production. Added-value could be achieved if DDG were incorporated into human-consumed foods. Approximately 6% of DDG is starch, but it is unknown whether starch has remained in digestible form during processing, or whether retrogradation has occurred and starch has become resistant to digestion, thereby contributing to dietary fiber. We are currently measuring DDG resistant starch, total dietary fiber and antioxidants contents to evaluate the potential for DDG to be included in food formulations to improve the nutrition of foods. Additionally if starch is in resistant form, there may be potential to isolate this fiber as a commercially available dietary fiber for food industries.
