Interpretive Summary: Technical Abstract: This chapter provides an indepth morphological, physiological and genetic description of species assigned to the yeast genus Pichia. The species and the genus have been defined from multigene sequence analysis. Species of Pichia are worldwide in distribution often occurring naturally in rotted fruit and vegetables and in wound exudates of trees and other plants. Some of the species are common food spoilage organisms and two of the species are human pathogens. |
