Smith, Arkansas. p. 50-52. Interpretive Summary: Fruits and vegetables offer natural sources of human wellness compounds or phytonutrients. Some of these are well known vitamins, such as vitamins C and A, while others are relatively unknown, such as tannins and ellagic acid. In this paper, a list of the types of phytonutrients, their effects in prevention of human diseases and disorders, and common fruit sources of phytonutrients is presented for consumers.
Technical Abstract: Phytonutrients are compounds that are vitamins, minerals, or chemicals with non-nutrient health effects and are found in plants. These can include vitamin C, calcium, potassium, soluble fiber, carotenoids, phenolics, and tannins. In this paper, a list of the types of phytonutrients, their effects in prevention of human diseases and disorders, and common fruit sources of phtonutreients is presented. This information is designed to help consumers better understand the interactions of plants and human health.
