Technical Abstract: This chapter presents new applications of hyperspectral imaging for measuring the optical properties of fruits and assessing their quality attributes. A brief overview is given of current techniques for measuring optical properties of turbid and opaque biological materials. Then a detailed description of a hyperspectral imaging technique for measuring optical properties is presented, which includes its principle, instrument setup, calibration procedure, data analysis, and system validation. Examples are given of applying this technique to measure optical properties of fresh apples and peaches and juices, and to assess fruit quality attributes based on the optical properties and empirical data analysis methods. The chapter ends with some concluding remarks on the prospects of this promising technique.
