Technical Abstract: The Dutton Award speech consisted of Mr. Adlof's research history [the analysis/ characterization of nylon-9 precursors/(1968-1970), using deuterium-labeled fats to study their metabolism in humans (with Ed Emken; 1975-1998), and relating triglyceride structure(s) to a food's sensory properties and oxidative stability (1998-Present)]. Since deuterium is non-radioactive, labeled fats could be fed to humans and, by taking blood samples over several days and isolating and analyzing (gas chromatography/mass spectrometry) the triglycerides, the incorporation/ metabolism of isomeric fats could be followed. This methodology was used to study the uptake and turnover of positional or configurational (trans) isomers, determination of their metabolites/ metabolic pathways, of fat/ cholesterol interactions and the fat absorption/ utilization in individuals (infant to adult) afflicted with metabolic disorders such as multiple sclerosis. Our data demonstrated that results obtained from animal studies often cannot be related to humans. Silver ion chromatography, initially utilized to purify labeled fats synthesized in our laboratory, has recently been applied to the analysis of the triglyceride compositions of structured fats, in low-trans or low-saturated fat formulations, in genetically modified oils, and the trans isomers in partially hydrogenated oils.
