Interpretive Summary:

Technical Abstract: This book chapter presents the salient biochemical, physiological, and nutritional principles pertaining to each of the vitamin and mineral micronutrients. A discussion of what endogenous and exogenous factors determine nutrient requirements is included, as is a discussion of what the difference is between 'adequate' amounts of a nutrient versus 'optimal' amounts. Several exemplary nutrients are discussed in regard to how recent insights into additional cellular and clinical functions for nutrients have resulted in new perspectives on what the requirement might be for that particular nutrient.
