Interpretive Summary:

Technical Abstract: This paper depicts the current state of the art in the hydrogenation of vegetable oils. Systems that have been installed in new plants over the last five years in the United States are described, including quality, productivity, safety, energy conservation, and automation. Methods of producing hydrogenated products with reduced trans fatty acid content are reviewed, including the use of special catalysts. Other methods of producing hardened fats, such as interesterification and genetically altered fats, are discussed.
