Technical Abstract: A new research project at the USDA-ARS Grain Marketing and Production Research Center (GMPRC) on New Uses of Sorghum was recently started. This research project was created partially in response to lobbying efforts by the NGSP. The new project currently has one full-time scientist, Dr. Scott Bean, and one scientist at 50%, Dr. Larry Sietz. Some objectives of this research plan are to improve the quality of food products produced from sorghum, to investigate the use of sorghum for bio-industrial products and utilization, and to examine the relationships between sorghum kernel properties, protein composition and processing quality. Some specific research projects that are currently in progress include the production of sorghum noodles, waffles, and bread, and investigating the use of the single kernel characterization system (SKCS) for analyzing sorghum kernel properties.
