Technical Abstract: Hi stearic acid soybean oils contain a number of disaturated triglycerides of the symmetrical SUS type where S = saturated and U = unsaturated. The most predominant ones, including SOS, SLS and SlnS, were synthesized in high purity and their physical properties determined. In addition, the non-symmetrical triglycerides SOS, SSL, and SSLn were also synthesized and characterized. The phase behavior of the functional triglycerides was studied as binary mixtures with soybean oil. The symmetrical triglycerides (SUS) behave as ideal solutions since plots of log melting points values vs. 1/T are linear. The non-symmetrical (SSU) triglycerides show considerable deviation from ideal solution behavior which, in part, accounts for the solid fat content and melting behavior of interesterified, hi stearic acid soybean oils.
