Interpretive Summary: Technical Abstract: To evaluate the relationships between plasma zinc and zinc kinetic parameters, we measured the indices of zinc nutriture including plasma zinc, zinc kinetic parameters and food frequencies in 33 premenopausal women consuming self-selected diets. Zinc kinetics were analyzed based on the three-compartment mammillary model with a central zinc pool and two peripheral zinc pools. Lower plasma zinc was associated with smaller sizes of the central and the lesser peripheral zinc pools; faster disappearance of zinc from plasma; higher transfer rate constants from the lesser peripheral zinc pool to the central zinc pool and from the central zinc pool to the greater peripheral zinc pool. Plasma zinc concentration positively correlated with rate constant for urinary zinc excretion. Smaller size of the lesser peripheral pool was associated with lower frequency of beef consumption and higher frequency of bran breakfast cereal lconsumption. Premenopausal women consuming less bioavailable zinc and more zinc absorption inhibitors are at risk of poor zinc nutriture. These results suggest that the homeostatic adjustments in zinc kinetics do not completely compensate with diets poor in bioavailable zinc. |
