Although global food production has increased impressively in recent decades, this so-called "green revolution" has chiefly involved cereal grains which are important sources of calories and protein, but tend to provide only minimal amounts of the micronutrients. Further sustained efforts are needed to meet the increasing food demands of the world's expanding population; but these must also increase supplies of bioavailable micronutrients. Approaches for such an effort, a "Greener Revolution", in which sustainability is an explicit goal, are outlined. |
