Technical Abstract: Root and tuber crops (potato, cassava, sweet potato, and yams) comprise 4 of the 10 major food staples of the world and serve as a major source of energy for the poor of developing nations. Minimal strain placed on agro ecosystems by root and tuber crops highlight their welcomed contribution to the future stability of global food security. The objective of this chapter is to summarize the production, processing, distribution, consumption, nutrition, and health benefits of root and tuber crops within a global context.
