Technical Abstract: People can contract infections by consuming beef infected with Sarcocystis hominis or pork infected with Sarcocystis suihominis. Proper cooking can eliminate this foodborne risk of infection. Here, the biology of such parasites is thoroughly reviewed, focusing on the epidemiology, diagnosis, treatment, prevention, and genetics of these and related foodborne organisms. Special emphasis is also placed on emerging information about related parasites that can induce chronic intramuscular infections in people, based on outbreaks of zoonotic disease in the last two years. This information will be of interest to the public health community, veterinarians, livestock producers, physicians, and epidemiologists.
