Objective:
To conduct research on micronutrient bioavailability of staple food crops and food products, and utilize this information to improve the nutritional quality of the targeted food.

Approach:
A combination of in vitro digestion and cell culture techniques will be coupled with animal feeding trials to determine nutrient bioavailability. To complement this approach, quantitative analysis of minerals, select phytochemicals and nutrients will also be conducted using inductively coupled plasma emission spectroscopy, liquid chromatography and mass spectroscopy.
