Objective:
Develop predictive models and Chinese predictive microbial models database of pathogenic and spoilage microorganisms in meat and meat products during processing and distribution based on advanced computational framework, and continue to support the development of Chinese database compatible with international data resource for food safety decision making.

Approach:
Experiments and data analysis on the growth of pathogenic and spoilage microorganisms in chilled pork, chicken, and beef at different storage temperatures will be conducted in the Cooperator’s laboratory. Predictive models will be implemented in the Pathogen Modeling Program. Models will be added to Chinese database. Computational database on improving its functionality, applications and compatibility with international data resource will be developed.
