Objective:
1. To investigate novel prebiotics that inhibit food-borne pathogen (such as Listeria monocytogenes, E. coli O157:H7) adhesion and invasion while contributing to immune modulation. 2. To explore the effects of dietary ingredients and exogenous bacteria on the ecology and metabolism of the human gut microbiota.

Approach:
A combination of approaches such as cell culture systems, flow cytometry and cell sorting instruments, microplate readers, fluorescence microscopy and imaging systems, anaerobic fermentation bioreactors, and high-performance liquid chromatography (HPLC) will be used to analyze functional food components.
