Objective:
Develop and deploy wheat germplasm with health-beneficial biochemical profiles and economically important baking quality characteristics.

Approach:
1. Measure phytic acid phosphorus and inorganic phosphorus concentrations in populations derived from low phytate wheat mutant. 2. Evaluate the protein distribution in germplasm with a high grain protein concentration trait from wild emmer wheat. 3. Screen breeding materials derived from crosses to wheat's wild relatives for increased iron and zinc concentration. 4. Perform solvent retention capacity tests to screen wheat germplasm in development for functional gluten quality.
